Pomdarin Cornish Hens (2-4) 2-18 oz. Mandarin Orange + Juice 2 oz. Pomegranite Juice 2 T. Molasses 4 T Honey ¼ tsp. Lemon Pepper 1 tsp. Rosemary Marinade Hens in the above ingredients overnight, turning occasionally. (Pour some inside the cavities also) Saute 2 Garlic Cloves in 8 T of Butter Combine this with marinade and flour or cornstarch, a little at a time (1/4 tsp.) until it thickens to a gravy consistency, Pour thickened mixture over hens, (in a baking dish or roasting pan) cover and bake @ 350*F for 1 ½ hrs. Basting occasionally. Uncover, toss about ½ cup of fresh pomegranate seeds over hens and brown, un-covered for about 10 minutes. Note: “I used Naturally Pomogranite” juice from Sam’s @ approx. $4.99 per bottle. You may substitute fresh lemon, oranges and/or juice for the man. oranges and omit the fresh pom. if out of season. I served this with Fresh Asparagus Spears, steamed with butter, until just cooked, but firm, crunchy and bright green. Steamed Artichokes.. with butter, lemon pepper and garlic sauce…on the side. 11/2007 Copies allowed for personal use, but not publication.
