Tortellini Soup
3 cloves of garlic minced 1 tablespoon butter or margarine 1 48 ounce can of chicken or beef broth (I recommend a good brand Like College In or Swanson) 1 19 ounce package of frozen cheese tortellini 1 10 ounce package of frozen chopped spinach (fresh is ok too) make sure you squeeze out excess water from frozen spinach 2 14½ ounce cans of chopped tomatoes (I like Rold Gold best) Stewed (you will need to chop up) tomatoes is a good alternative or one can of each. Fresh grated Parmesan or Romano or combo of both cheeses.
In large saucepan, over medium heat sauté garlic in butter. Add broth and tortellini. Bring to boil. Reduce heat and simmer for 10 minutes. Add spinach and tomatoes, simmer 5 minutes more.
Sprinkle each serving with cheese. Serve with French bread and salad…. healthy and tasty.
