Homemade chicken noodle:
1 package boneless chicken thighs (or breasts if you prefer white meat) Water Veggies you prefer - usually carrots, celery, cabbage, parsnips 2 tablespoons Italian seasoning 1 package Reams egg noodles (in the freezer section at the grocery store) Salt and pepper to taste.
Put chicken in soup pot. Cover with water and bring to a boil. Simmer chicken until tender. Remove and let cool. Skim foam and some of the fat from the water. Add veggies and noodles to the same water you boiled the chicken in - bring to a boil again. Add Italian seasoning, salt, and pepper. Simmer until veggies and noodles are tender. Dice up chicken and add to soup. Give it a good stir then serve! It's that simple!!! It's a great comfort food.
You can also substitute rice for the noodles.
