Capri Salad... Serves 4
2 beef tomatoes 4 1/2 oz motzarella cheese 12 black olives 8 basil leaves 1 tbsn balsamic vinegar 1 tbsn olive oil salt and pepper basil leaves to garnish
1. Using a sharp knife cut the tomatoes into thin slices. 2. Using a sharp knife cut the motzarella in slices... I grated mine. 3. Pit the olives and slice into rings... I used a 4oz can of sliced olives. 4. Layer the tomatoe motzarella and olives in a stack finishing with cheese on top. 5. Place each stack under a preheated hot grill (broiler) for 3 minutes or until cheese melts... I like mine kinda crunchy to add texture. 6. Drizzle over vinager and olive oil and season to taste with salt and pepper. 7. Transfer to serving plates and garnish with basil leaves serve immediately.
