MINT CREAM BROWNIES
1 package brownie mix (with pouch of chocolate syrup)
1/3 cup water
1/3 cup vegetable oil
2 eggs 1 (8-ounce) package cream cheese, softened
1/3 cup sugar
2 teaspoons mint extract
1 egg, slightly beaten
powdered sugar, optional
chocolate frosting, optional
chopped nuts, optional
1.Heat oven to 375 degrees. Grease bottom only of
13-by-9-by-2-inch baking pan. Prepare brownie mix as
directed on package, using water, oil and 2 eggs. Pour
half of the batter into the pan.
2. Using a wire whisk, stir cream cheese, sugar, mint
extract and egg in small bowl until smooth. Drop
cheese mixture by spoonfuls onto brownie batter. Pour
remaining brownie batter over cheese mixture. Swirl
cheese mixture through brownie batter with knife for
marbled design.
3. Bake 30-35 minutes or until toothpick inserted near
center comes out clean; cool. Sprinkle with powdered
sugar, if desired, or frost the brownies with
store-bought chocolate frosting and top with chopped
nuts or cherries.
Makes 2 dozen Perfect Squares
The secret to cutting perfect bars is to line the pan
with aluminum foil. To shape foil, turn the pan upside
down and form a piece of aluminum foil over it,
leaving the foil about 1 inch longer on two opposite
sides (for lifting). Carefully remove foil and fit
foil into pan. Grease foil as directed in recipe. When
the bars have baked and cooled, lift the aluminum foil
and bars out of the pan onto a cutting surface. Peel
foil back and cut bars. Try using a plastic knife for
nice, even cuts.
