Tempting Peanut Brittle
2 C sugar 1 C light corn syrup 1-1/2 C salted peanuts 3 T butter 1 t vanilla 2 t soda
Combine sugar, corn syrup and 1/4 C water in 3 quart heavy saucepan; mix well. Cook over medium heat, stirring constantly until sugar dissolves. Cook, stirring frequently, until candy thermometer registers 285 degrees. Remove from heat; stir in peanuts and butter. Cook, stirring constantly, to 295 degrees. Remove from heat. Add vanilla and soda; greased marble slab or 2 large greased baking sheets; spread out thin. Cool for 5 minutes or just enough to handle. Turn candy over; pull to stretch as thin as possible. Cool thoroughly; break into pieces.
Yield: about 2 lbs
