2/3 c granulated suagr 2/3 packed brown sugar 1/2 cup STICK margarine 1/2 cup shortening or veg oil 1 tsp baking soda 1 tsp ground cinnamon 1 tsp vanilla (extract) 1/2 tsp baking powder 1/2 tsp salt 2 large eggs 3 c quick cooking or old fashioned oats 1 c all purpose flour** 1/2 c canned or fresh fruit - drained well if canned and diced (i like to use peaches or apricots) 1/2 c dried fruit diced (i like to use cranberries)***
1. Heat oven to 375 degrees 2. Mix all ingrediants except oats, flour, and fruit in a large bowl. Stir in oats, flour and fruit. 3. Drop dough by rounded tbsn's about 2 inches apart onto ungreased cookie sheet. 4. Bake 9-11 minutes or until light brown. Immediatly remove from cookie sheet.
* Spreas with at least 65% vegtable oil can be substituted **If using self rising flour omit baking soda ***Using half fresh or canned fruit and half dried allows the dry fruit to absorb some of the juice and moisture of the fresh or canned.
