Turtles (Please NOTE the Change in amt. of Chocolate Bars and the method of melting it, I updated this, as I didn't have the recipe written down, just in my head.. ) About 2 lbs. pecans, halved 3 lg. Hersheys bars 2 pkgs. caramels spray cookie sheets with Xtra-Virgin Olive Oil make piles of 3, with pecans (about 1 doz. per sheet) Cover with melted caramels: (directions of amount of water on pkg., about 1 Tbsp.) Swirling/drizzling caramel from outer to center of the "piles" of pecans, using spoon to cover all of the pecans)..and let cool. Cover with chocolate: melt in a low/warm oven, I use a glass dish. (Be careful not to "Over-cook") Use same drizzle/swirling method as above, letting a very small amount "flow" over the sides and let cool. I put them in a big tin w/waxed paper between ea. layer Makes about 36 turtles. Enjoy
